Laura writes "Students appreciate that we are willing to offer a selection of gluten free options that taste great and are of high quality.  A lot of the feedback that I get from the station is that the pita holds up and that some students forget that its gluten free since as a gluten free “bread” product it actually tastes good."

"we have seen a lift in sales after switching the concepts each semester and we’ve been fortunate to have a local partner who works collaboratively with us to find solutions and make products that work with our vision. Our staff say that about 1 in every 5 customers that come up to the station have celiac disease or a gluten allergy, the rest just enjoy the food which is amazing to see.  The intent was to create a delicious menu that everyone can enjoy without isolating those who are gluten free, and so far it’s been a great success."
